Butter and anchovy sauce
Can be used as an accompaniment to any product you like.
100 gr. of butter
6 anchovies Chop & Mince in oil
1 tablespoon of chopped parsley
Juice of 1 lemon
Crush the anchovies (well drained of their oil) in a mortar and pestle with part of the butter.
Once a puree is obtained, add the rest of the butter.
Heat it in a saucepan, but do not boil the butter.
When it has become liquid, add the lemon juice and the chopped parsley.
Pour it over whatever you are going to serve or serve it in a separate sauce dish (previously heated with boiling water).
