Is there anything healthier than a good ratatouille?

Courgette ratatouille with tuna
You can also make the ratatouille in advance, adding the tuna just before serving.
1 ½ kg. medium courgettes
2 large onions
1 medium green pepper
¾ kg tomatoes (6 large ones)
8 tablespoons of oil
½ glass (of wine) of good vinegar
3 soupspoons of cold water
1 glass jar of Arlequin tuna
Heat 4 tablespoons of oil in a large frying pan.
Sauté the peeled courgette, cut into rather large cubes (remove the seeds if they are present) and add, once sautéed for a couple of minutes, about 3 tablespoons of water (a trickle).
Leave to cook for about ¼ hour until soft.
In another frying pan, add another 3 tablespoons of oil and fry the washed and diced pepper very well, frying it over a medium heat for about 15 minutes, until it is soft.
Remove and set aside on a plate.
Fry the peeled and chopped onions; when they begin to brown, add the washed, peeled and diced tomatoes, removing the seeds.
Fry well, mashing them with the edge of a skimmer until the tomatoes are thick.
When it is ready, pour it into the large frying pan with the courgette and the pepper and stir it all together for about 10 minutes, turning the pisto from time to time.
Separately, drain the tuna well and cut it into large pieces. When ready to serve, mix it with the ratatouille to heat it up and serve immediately.
Our mouths are already watering at the thought of it!
