Zucchini Ratatouille with Tuna
You can also prepare the ratatouille in advance, adding the tuna just before serving.
Ingredients
1 ½ kg medium-sized zucchini
2 large onions
1 medium green bell pepper
¾ kg tomatoes (6 large)
8 tablespoons of oil
½ wine glass of good vinegar
3 tablespoons of cold water
1 glass jar of Arlequin tuna

Preparation
Heat 4 tablespoons of oil in a large frying pan.
Sauté the peeled zucchini cut into rather large cubes (remove seeds if present) and add, after sautéing for a couple of minutes, about 3 tablespoons of water (a splash).
Let it cook for ¼ hour until soft.
In another pan, add 3 more tablespoons of oil and fry the washed and diced bell pepper very well, cooking over medium heat for about 15 minutes, until soft.
Remove and set aside on a plate.
Fry the peeled and chopped onions; when they start to brown, add the washed, peeled, and diced tomatoes with seeds removed.
Fry them well, mashing them with the edge of a slotted spoon until the tomatoes are thick.
When ready, add it to the large pan with the zucchini and bell pepper and stir everything together for about 10 minutes, turning the ratatouille occasionally.
Separately, drain the tuna well and cut it into large pieces. When ready to serve, mix it with the ratatouille to heat it and serve immediately.
