Butter and Anchovy Sauce
Can be used as an accompaniment to any product you wish.
Ingredients
100 g of butter
6 chopped anchovies in oil
1 tablespoon of chopped parsley
Juice of 1 lemon
Preparation
Mash the anchovies (well-drained of their oil) in a mortar with some of the butter.
Once a puree is obtained, add the rest of the butter.
Heat it in a saucepan, but without letting the butter boil.
When it’s liquid, add the lemon juice and chopped parsley.
Pour it over what you’re going to serve or serve it in a separate sauce boat (previously heated with boiling water).
