Chicken stew with onion, tomato, and red pepper
You can also include some delicious potato chips as a side dish for this stew, but we’ll leave that up to you.
Ingredients
2 chickens of 1 ¼ kg each (cut into medium pieces)
100 g of streaky bacon
4 tablespoons of oil
6 small tomatoes
8 French onions
1 knob of butter
1 small jar (100 g) of piquillo peppers (wood-fired)
Half a glass (of water) of white wine
Half a glass (of water) of water
1 pinch of aromatic herbs
1 tablespoon of chopped parsley
Salt
Preparation
Once flambéed and prepared, cut the chicken into pieces.
Heat the oil in a pan. When it’s ready, fry the chicken pieces well.
Add the bacon cut into cubes. Add the peeled but whole tomatoes.
Season with salt and aromatic herbs.
Stir well with a wooden spoon and pour in the wine and water.
Cover the pot with a lid and cook the chicken over medium heat for about 45 minutes if tender, if not, a bit longer, but make sure the pieces don’t fall apart.
Separately, in a small saucepan, cook the peeled onions with butter, a little water to cover them, and salt.
When the chicken is tender, add the onion, pepper cut into thin strips, and chopped parsley.
Stir with a wooden spoon and serve immediately in a dish.
