Description
Honey and almonds are the two essential elements that make up the nougat made in Jijona, under the Protected Geographical Indication seal, granted by the Regulatory Council.
To know its origin, it is necessary to look back and down to the earth.
The first turroneros were actually farmers who cultivated almond trees and collected honey, but in winter, when it snowed, they had to survive.
That is why it occurred to them to transform the raw materials they produced into a foodstuff that they could sell at the trade fairs of the time.
The climatological and geological conditions of the province of Alicante are particularly suitable for the cultivation of the almond tree, a tree that only grows in a Mediterranean climate.
Another of the peculiarities of this tree is that in order to reproduce it must be pollinated, hence the need to facilitate the bees to perform their function and produce honey.
However, for nougat to go beyond being a simple mixture of sugar, almonds and honey, rigorous and ancestral elaboration and quality processes must be followed.
